Owner and Head Chef, Chef Kazuhiko Daito has extensively renovated his former establishment “Essentiel” and reopened it as a new French cuisine restaurant which he has named SINAE.
The name of the restaurant, SINAE, is derived from the initials of his concept “SImple, NAtural, Essence,” and is based on his wish for a future in which “the circle of life, harmony, peace, people, all living things and the earth can come together, hand in hand, to create more beautiful days.”
Chef Kazuhiko Daito’s main focus and commitment is to his guests, and so the goal of the entire restaurant is to create a valuable dining experience for all those who visit.
In the kitchen, his team transforms ingredients to create amazing dishes. The previous counter seating-based layout has been shifted to only table seating in the new SINAE, and this is based on the desire to offer delicious cuisine and the warm hospitality of the staff at this iconic and historic setting of French cuisine.
Additionally, a single table (Chef’s Table) has been placed right next to the kitchen which allows the pair seated there to experience the atmosphere and vitality of the kitchen firsthand.
Combining domestically sourced ingredients with traditional techniques, SINAE crafts a unique style of French cuisine which embodies the terroir of Japan, served on pristine white plateware.
The restaurant has swiftly gained popularity, earning a special award in the French gourmet guide “La Liste”, as well as acquiring a 1-star rating in the Michelin Guide New Selection.
