Chef Izumi is deeply passionate about utsuwa (traditional Japanese tableware), believing that “the utsuwa is like a kimono for the cuisine.” He explains, “Of course, the food itself is essential. But the tableware, the silverware, and even the alcove displaying art or seasonal flowers — all of these elements work together to express the season and bring Japanese cuisine to life.”
