In the historic and charming neighborhood of Kagurazaka, where the culture of old Tokyo still remains deeply ingrained, stand Kifu, a sushi establishment which offers traditional and authentic Edo-style sushi.
Kifu’s Edo-style sushi is crafted using carefully selected ingredients personally sourced from Toyosu Market by the head chef , ensuring the use of only the very best materials for the neta (topping).
A blend of specially cultivated brand rice is used to create a well-balanced shari (sushi rice), resulting in sushi of the perfect balance between neta and shari.
Chef Sato, the master of the restaurant, brings with him the experience of having previously been the head chef of a Michelin-starred restaurant in Ginza before opening Kifu. Cherishing each aspect of the process, his goal is to make sushi which maximizes the potential of each ingredient.
The L-shaped counter of only 8 seats, allows guests to observe the chef’s skills from different angles and engage in fun and enjoyable conversations and this helps to create a memorable dining experience.
The name “Kifu” means “the passage of time” or “the flow of time.”
