Chef Keisuke Mifune began his training at the renowned restaurant “Ajikitcho” in Osaka, where he spent 13 years learning the fundamentals of Japanese cuisine, also serving as its head chef for about 5 years, before going independent and establishing his own restaurant “Yugen” in June 2019.

Yugen earned a Michelin star in the “Michelin Guide Osaka” in its first year, and was subsequently awarded two Michelin stars in 2024.

Chef Mifune is a top chef who is highly-praised and recognized by both his peers and customers alike, and who cherishes the fundamentals of Japanese cuisine and dedicates himself wholeheartedly to his craft.

Ajikitcho is a renowned training ground where aspiring chefs dream of perfecting the art of Japanese cuisine. The mastery of “dashi” (soup stock) Chef Mifune acquired there has been further honed at Yugen.
Unlike Ajikitcho which does not have a counter and focuses solely on preparing dishes within the kitchen, Yugen offers a counter where Chef Mifune is able to interact face-to-face with his guests while showcasing his skills and serving well-rounded Japanese dishes to them.

Chef Mifune’s noble personality, highlighted by his unending gratitude towards his mentors, food producers, and guests, is reflected clearly in his cooking and cuisine.

Equipped with 6 counter seats and one private room which welcomes children, Yugen is quickly becoming a restaurant where reservations are becoming increasingly difficult to procure at.
We cannot recommend Yugen highly enough to those who wish to experience the true beauty and depth of Japanese cuisine.
