Head Chef Kato trained at the Michelin-starred Sushidokoro Kurosugi in Osaka’s Kitashinchi district, then opened his own restaurant in Nakazakicho. His sushi stands out for its refined blend of Edomae technique and Kansai flair, crafted with sincerity and attention to detail.

He sources top-quality fish directly from Toyosu Market and local producers, preparing everything with care. A highlight is the live squid sashimi, served straight from the tank—when in season, it’s a rare treat in both freshness and flavor.

Guests can watch the chef in action from the striking 12-seat Yoshino cedar counter, or relax in private rooms for 2 to 12 people. With its welcoming atmosphere and uncompromising quality, Sushi Koutsuki is perfect for anyone seeking authentic sushi without the formality.
