Nestled just 30 minutes by car from Komatsu Airport in Ishikawa lies the enchanting town of Kanagaso, where time seems to slow amid the breathtaking satoyama landscapes.
Revered for its “stone culture” and recognized as a part of a Japan Heritage site, this picturesque locale is now home to a hidden gem: a former elementary school, steeped in history, lovingly transformed into the exquisite ‘Auberge eaufeu,’ a sanctuary of gastronomy and culture.

Within its walls, where modern art graces every corner, guests are invited to a realm of refined elegance and nostalgic warmth.

At the helm of this establishment is the illustrious Chef Shota Itoi, a culinary prodigy who claimed the grand prize in a national competition at just 26, and in 2023, was honored with the ‘Young Talent Award’ by the Japanese edition of the prestigious Gault & Millau. Chef Itoi masterfully weaves the essence of the region into every dish, transforming local ingredients into innovative masterpieces which resonate with the memories of this cherished school.
Adjacent to this haven of flavors is the Noguchi Naohiko Sake Institute, the legendary brewery of Mr. Noguchi, who is revered as a god of sake.

Here at Auberge eaufeu, guests are invited to indulge in a symphony of flavors of culinary creations paired with divine sake, offering a truly sublime experience of Japan’s rural beauty, right in the heart of Komatsu, Ishikawa.
