Kyoto Cuisine Toriyone sits at the gates of Matsuo Taisha, one of Kyoto’s oldest shrines. Revered since the Heian period, this shrine honors the guardian deity of the imperial city and the god of brewing.
Founded in 1888, Toriyone showcases its historical roots through its signature dish, the “Tori no Mizutaki Nabe” (chicken hot pot). The restaurant uses pure spring water from Mount Matsuo and simmers chicken for two full days to create a rich and flavorful broth. Skilled staff prepare and serve the hot pot tableside during the course meal, offering an immersive dining experience. The dish also features tofu from “Moriya,” a renowned tofu maker in Saga with over 160 years of history, making it a must-try delicacy.
Chef Yoshinori Tanaka, the sixth-generation head chef, trained in Kanazawa before returning home in 2004 to perfect his craft. As a leading figure in Japan’s culinary scene, he introduced the “Chicken Kaiseki,” which blends traditional Kyoto cuisine with the famous chicken hot pot. He also developed the “Vegetarian Kaiseki” menu, which uses plant-based ingredients and innovative techniques to create flavorful dishes.
The restaurant’s Japanese garden enhances the experience with its seasonal beauty. Guests admire cherry blossoms in spring, lush greenery in summer, brilliant autumn leaves, and serene snowy landscapes in winter. Many couples choose the garden for wedding photos.
