The renowned”Sushi Watanabe” in Sapporo’s Susukino district is run by a sushi chef who deeply loves both Hokkaido and sushi.

Utilizing ingredients unique to Hokkaido, they continue to offer their own style of sushi, “Watanabe-style Ezo-mae Sushi,” which cannot be found in Osaka or Tokyo.

Chef Watanabe is also dedicated to training the next generation of sushi chefs in Hokkaido, and “Sushi Yatsuha” is the stage on where his apprentice chefs, trained in Watanabe’s techniques, create and serve sushi at a separate counter within Sushi Watanabe.

The quality of the sushi served here offers excellent value for money and is sure to satisfy both those who are novices to sushi, as well as seasoned sushi lovers. The name “Yatsuha” (eight leaves) signifies the idea of leaf veins spreading like blood vessels throughout the leaf, symbolizing Chef Watanabe’s deep desire to spread his passion.

Each seving of sushi is beautifully crafted, filled with passion and offers deep and amazing flavors. Yatsuha’s counter is located in a private room next to the main counter within Sushi Watanabe and is limited to only 5 seats.

It is here where you can taste the high-quality Hokkaido sushi made through impressive skills and enjoy great value provided by Chef Watanabe enthusiastic apprentices.
