Chef Michikazu Yoshida—affectionately known as “Michi”—honed his craft through years of training in Japan before taking his sushi to Seattle, New York, and Hong Kong.

In 2025, he returned home to open Sushi Waku , a restaurant shaped by both his international experience and traditional Japanese techniques.

Having served guests from around the world, Chef Michi has a keen understanding of how aroma, temperature, and flavor preferences vary across cultures. He adjusts each piece to suit the individual diner—even within the same group—while remaining firmly rooted in classic Edomae sushi. His cuisine draws on the foundational techniques of Japanese cooking—cutting, grilling, simmering, frying, and steaming—with the addition of marinating to bring out the finest qualities of Japan’s ingredients. His sushi emphasizes fragrance, temperature, texture, and thoughtful creativity, all prepared directly in front of guests.

Sushi Waku also offers a carefully selected sake pairing by Service Manager Emi, enhancing the experience further.
The restaurant welcomes vegan, vegetarian, and gluten-free diners, making it an ideal choice for groups with diverse needs.
