Chef Mizukami of Sushi Mizukami spoke highly of this restaurant, saying, “I truly respect this place as a fellow sushi chef”. This led us to Sushi Hakozakicho Sumito.
Just five minutes on foot from Suitengumae Station, near Nihonbashi, this elegant sushi bar quietly resides in Tokyo’s Hakozakicho. “Sumito” is the name of the head chef himself—graceful in both sound and spirit.
Chef Sumito Kurokawa trained at Yokohama’s famed Nakajo, one of Japan’s top sushi restaurants. After years of dedication, he opened his own space, bringing his vision to life.
A softly lit lantern at street level marks the entrance. Descending the stairs reveals a serene and spacious interior, with a polished L-shaped counter seating eight. The craftsmanship of the counter alone reflects the chef’s refined sensibilities.
Chef Sumito serves each course in harmony with the guest’s pace, his calm presence adding to the experience. His fish handling is exceptional—each piece tender, full of umami, and delicately aromatic. The thick-sliced tuna is especially memorable, with a supple texture and rich flavor.
Every element, from the careful preparation to the perfect balance of fish and rice, shows a deep respect for the craft. The sushi leaves a lasting impression—so well-matched, you won’t want the bite to end.
