It was after 16 long years since Chef Keisuke Fukasawa began his training to become a Sushi Chef when he opened the doors of his reservation-only establishment Ginza Fukusawa in the heart of Ginza in April 2022.
Many of his years as an apprentice were spent in Singapore at Sushi Shinji, an affiliate establishment of Sushi Kanesaka, where he honed not only his craft of making Sushi, but also his English verbal skills in order to communicate with guests from all over the world.
The sushi he serves is elegant yet simple and uses only the best and freshest neta Chef Fukusawa personally curated from the market every morning. Being born in raised in prefecture of Ibaraki, the chef also makes it a point to use many ingredients from Ibaraki.
Decorated behind the 8 seat Sushi counter of Ginza Fukusawa is a wooden board of lignitised Japanese cedar wood, creating an authentic and traditional atmosphere which almost feels another-worldly compared to the modernity of Ginza outside.
Ginza Fukusawa is a place where amazing sushi and hospitality by an amicable English-speaking Sushi Chef can be enjoyed.
