The owner and head chef of Edition Koji Shimomura, Koji Shimomura, moved to France in 1990 and earned his stripes over 8 rigorous years at highly-famed establishments, such as then 3 Michelin-starred La cote d’or before returning to Japan.
He opened Edition Koji Shimomura in 2007 in Roppongi Tokyo and received 2 Michelin stars the following year and has not failed to receive the same honor every year since.
Chef Koji Shimomura’s innovative culinary offerings are a collection of his experiences which he gathered when traveling through various countries, coming in contact with many food producers and collaborating with other talented culinary artists.
It is his utmost wish that as many people as possible have the opportunity to experience his dishes at Edition Koji Shimomura.
