Hèritage by Kei Kobayashi opened in January 2024 at The Ritz-Carlton, Tokyo, produced by Chef Kei Kobayashi of Restaurant KEI in Paris—the first Asian chef in France to be awarded three Michelin stars.
The name Hèritage means “heritage” in French, reflecting Chef Kobayashi’s gratitude for French culinary culture and his mission to carry it forward. In Tokyo’s Roppongi, two accomplished chefs embody this vision.
Executive Chef Teruki Murashima built his career at renowned restaurants in Ginza and abroad, serving as Sous-Chef at L’Atelier Joël Robuchon Taipei (two Michelin stars) and later as Executive Chef at ESqUISSE Ginza (two Michelin stars). In 2024, he took the helm at Hèritage by Kei Kobayashi, guiding it to one Michelin star in the Michelin Guide Tokyo 2025, just in its first year. Chef Kobayashi trusts him fully, calling him “a chef who truly understands traditional French cuisine, grounded in its foundations, yet capable of reinterpreting it for the future.”
Pastry Chef Mayumi Kobori began her career at leading Japanese restaurants before training in France at acclaimed three-star establishments such as Maison Lameloise and La Dame de Pic Paris. Inspired by Chef Kobayashi’s spirit of innovation rooted in tradition, she returned to Japan to create delicate desserts that embody elegance and fleeting beauty.
