Opened in 2025, mærge is the latest project from Chef Hideyuki Shibata, who earned one Michelin star for six consecutive years.

Chef Shibata began his career at Mona Lisa, a Michelin-starred restaurant from the first Michelin Guide Tokyo in 2008. After training further in Burgundy and Paris, he returned to Tokyo to open La Clairière in 2016, holding a Michelin star from 2019 until its closure in 2024. In 2021, he was also awarded Gault & Millau’s “Tomorrow’s Grand Chef Award”.

Rather than remain complacent, Chef Shibata closed his popular restaurant and spent a year traveling across Japan, meeting producers and searching for what he calls “ingredients without falsehood”. He chose each product with his own eyes and palate, building mærge on uncompromising quality. Just three months after opening, the restaurant earned a Michelin star in the Michelin Guide Tokyo 2026.

Chef Shibata has gathered a talented team—cooks, pastry chefs, sommeliers, and service professionals—who share his vision. Their chemistry creates a warm, calm atmosphere where guests immediately feel at ease.
The interior design draws inspiration from the ancient Chinese philosophy of the Five Elements, expressing warmth through wood, shifting light, and natural textures. The space embraces a subtle sense of “unfinished beauty,” completed by the presence of guests and the flow of daily life.

mærge embodies the ideas behind its name: “marge” meaning space, and “merge” meaning fusion.
Through the harmony between team and guest, the restaurant continues to evolve each day—an ever-changing culinary experience shaped together at the table.
