Kiu is an place where its telephone number is not shared with the public and cannot be reserved via SNS or email.
This completely referral-only establishment in Kyoto was opened by the owner of the famed Sushi Hisada in Okayama and was never intended to win a Michelin star due to its referral-only nature.
Chef Kazuo Hisada learned Italian cuisine in culinary school but took a position in his uncle’s sushi restaurant upon graduation. He then opened his own business at the astonishingly young age of 23 years in Okayama and his sushi using only the freshest produce from the Seto Sea became an immediate hit with Sushi lovers from all across the country.
25 years from then, Chef Hisada says the reason he opened Kiu is so that guests could enjoy “dishes made by a former sushi chef in a non-sushi restaurant”.
The wish to serve the unique fusion of Sushi and Italian cuisine which cannot be found anywhere else is embodied in the fact that the kanji character “鮨 Sushi” in not included in the name of the restaurant.
However, the question of why it is completely referral-only and requires the entire restaurant to be privately booked remains.
The Chef says its because he wanted to create a place where it feels like a home where familiar people gather together, as some people cannot fully enjoy the atmosphere when sitting next to strangers.
If Chef Kuda’s cuisine was to be described in a few words, it would be “Sushi Innovation.” The cuisine that only Chef Kuda can create is completely new and cannot be found anywhere else, providing new surprises every time you visit his counter.
