Founded in 1935 in the heart of Ginza, Ginza Kyubey is one of Tokyo’s most iconic and prestigious sushi restaurants—so renowned that few in Ginza are unfamiliar with the name. It has captivated gourmets and cultural luminaries such as Rosanjin, one of Japan’s most famous epicures, as well as prime ministers, business leaders, and even United States presidents.
The secret to its lasting popularity lies in the exceptional skills of its more than 50 chefs, led by third-generation owner Kagehisa Imada. The restaurant sources the finest fish of the day through long-standing relationships of trust with top suppliers, particularly those in Toyosu and across Japan. Attentive and refined service completes the experience.

Ginza Kyubey is also known for its contribution to sushi history. The now-standard gunkan-maki style—seaweed-wrapped sushi topped with soft ingredients like sea urchin (uni) or salmon roe (ikura)—was invented by Kyubey’s founder to serve toppings that couldn’t be shaped into traditional nigiri. Today, gunkan-maki is a staple in sushi restaurants worldwide.
