Sushi Gion Matsudaya is currently listed in the Michelin Guide as 1 Star and is tucked away in a quiet alley of Gion in Kyoto. The owner and head chef, Kazunori Matsudaya has a very diverse background, broadening his horizons by doing a variety of things such as living in New York for a year, studying at a language school, doing delivery jobs, and photographing tourists.
Chef Matsudaya’s wish is that his guests enjoy sushi by having the full experience at his counter through watching, eating, and interacting. Strict attention to detail and consideration is paid to everything, such as the low unvarnished counter-style table made of hinoki wood, and the roomy high-back seats, all of which were designed personally by the owner with the comfort of the guests in mind.
Popular with guests from around the world, Matsudaya’s mission is “to put a smile on everyone’s face from their counter”. Only natural ingredients sourced directly from the market are used. There is no fixed menu, as Matsudaya provides only the best and freshest fish of the day. The fluffy sushi rice gently melts in your mouth and is cooked utilizing various techniques to bring out its maximum umami as well as the exquisite flavors of the seafood.
Matsudaya only has seven counter seats, and we recommend this restaurant for those looking to enjoy sushi and sake in the unique, mature atmosphere of Kyoto.
