To delight discerning international guests, Executive Chef Yuki Oe offers a selection of carefully chosen A5 Wagyu, including Kobe, Yonezawa, Yamagata, and Hitachi beef.
Each cut is evaluated individually—even within the same region, marbling and moisture vary from animal to animal—before the ideal seasoning and preparation are selected to suit the guest’s preference.
