Founded in 1850, Seki Masaru is the 5th-generation in his family at the long-established tempura restaurant “Ippoh,” where he is a chef at the Ginza location in Tokyo. Techniques that make Ippoh’s famous Kansai-style tempura with safflower oil have been passed down for generations for more than 150 years in Osaka and over 50 years in Tokyo. To this day, guests can also enjoy the very same charm of the tempura at Ippoh in Kansai, at the Ginza, Tokyo location.
The batter is drained of oil, resulting in even lighter tempura, so that guests can enjoy the natural flavors and aromas of the seasonal ingredients purchased from the market. The staff also carefully manages the humidity in the restaurant so that the light, delicious batter of the tempura is not affected. Each tempura is carefully deep-fried one by one, with the taste of each ingredient carefully being treasured. A short three-minute walk from Ginza Station, the restaurant is located on the 5th floor of the building with Barney’s New York. The restaurant has two different Hinoki wood counters, table seating, and Japanese-style private rooms.
Chef Seki studied abroad at a University in the U.S. and opened a location in Singapore, so guests can relax and enjoy having a conversation in English with him at Ippoh Tokyo Ginza.
