Sui Ohya first opened for business in Shinsaibashi in 2011 and then relocated to its current location in Temmabashi for its grand reopening in 2023.
Osaka is known for its chefs who pay great attention to detail, as well as for its architects who have a deep passion for culinary arts. Many new restaurants have recently emerged in which the architects collaborate closely with the chefs, resulting in very ideal environments in which the chefs are able to work efficiently and focus fully on their craft.
Sui Ohya is one such establishment. The restaurant occupies the second floor of a stylish concrete building located along the Okawa River in Tenmabashi, which offers splendid views of cherry blossoms in spring and lush greenery in summer, .
Head chef and owner Chef Tomokazu Ohya trained for 11 years at Naniwa Kappo Kigawa which was established in 1977 in Osaka. Chef Yoshifumi Matsuo, the owner of 3 Michelin-starred Koryu also trained there and was a senior to Chef Ohya.
Sui Ohya offers Osaka cuisine which uses high-quality ingredients and combines them with creativity and playfulness, ensuring that nothing is wasted and that everything is truly delicious.
One of the key features of the cuisine is its innovative approach to kombu dashi (kelp stock). Instead of the traditional method of soaking kombu in water, Chef Ohya uses a unique extraction process: soaking the kombu at 40°C for one hour, followed by heating it at 80°C for 30 minutes. This method results in a clear, umami-rich broth which doesn’t even require salt.
Sui Ohya’s omakase menu is refined daily by revisiting the fundamentals of Japanese cuisine. Organic vegetables and wild plants handpicked in the mountains of Nose are also incorporated in the dishes, and this showcases the chef’s commitment to continuous evolution.
Sui Ohya has garnered high praise from critics and customers alike, including a Michelin star, but what truly captivates its customers is Chef Ohya’s humility and gentle demeanor.
The restaurant offers a comfortable space with both counter and table seating, from where guests can enjoy a close view of the cooking process as well as the beautiful scenery outside.
