Born and raised in the charming district of Shimogamo, Kyoto, Chef Fujiyama embarked on his culinary journey at the esteemed [Wakuden] at the age of 24. Over the years, he refined his skills as the head chef at both Muromachi Wakuden and Kodaiji Wakuden, leading the renowned restaurant for two decades as its executive chef.
When Chef Fujiyama announced his move to Tokyo, the culinary world was abuzz with anticipation.
In March 2019, he unveiled Ginza Fujiyama and, within less than a year, earned a coveted Michelin star in the ‘Michelin Guide Tokyo 2020’. Embracing the challenge of a new beginning in unfamiliar territory, he found joy in exploring a wider array of ingredients and forging new connections with producers across Japan.
Yet, amidst this exciting evolution, Chef Fujiyama remains steadfast in his commitment to authenticity. The delicate art of crafting dashi (soup stock), a cornerstone of Japanese cuisine, is preserved with water sourced from a revered brewery in Tango, ensuring every dish maintains its Kyoto essence.
