Sushiya is a sushi restaurant that opened in October 2012 as a branch of the renowned “Sushi Kanesaka,” a Michelin 2-starred establishment that has operated for over 20 years in Ginza, an area home to over 200 sushi restaurants.
Sushi Kanesaka is famous for attracting reservations from both domestic and international diners. While the Kanesaka group has 13 locations across Japan and abroad, each restaurant is far from a standardized chain. Instead, each sushi chef decides the concept, menu, and pricing independently, following rigorous training. After mastering their craft, chefs are often supported in opening their own restaurants, leading to the growth of the “Kanesaka school,” a globally celebrated sushi lineage.
Sushiya Ginza serves as a gateway for apprentices to refine their craft within the Kanesaka school. However, this does not mean the sushi is anything less than exceptional. Using the finest seafood sourced directly from Toyosu Market, the chefs create sushi that lives up to the Kanesaka name.
For instance, the 3rd-generation owner of Sushiya Ginza, Chef Mamoru Hashimoto, graduated from this establishment and went on to open his own sushi restaurant Sushi Mamoru also in Ginza, which has become a popular destination.
The restaurant features an L-shaped counter with only eight seats. Neither too spacious nor too cramped, the space is cozy and well-lit, creating a relaxed atmosphere. From any angle, guests can enjoy the craftsmanship of the sushi chefs.
With a concept rooted in understanding, preserving, and celebrating the history and tradition of sushi culture, Sushiya Ginza welcomes guests from around the world to experience the true essence of sushi.
