A long-established sukiyaki restaurant which has consistently earned a Michelin star for 10 consecutive years since 2011.
Hiyama operates as a wholesaler at the Tokyo Meat Market. Not every renowned brand of Wagyu beef can bear the Hiyama name. Even cattle from the same farm can have individual differences. Every head of cattle is sampled, and only the beef that Hiyama confidently deems exceptional is carefully selected and branded as “Hiyama Tokusen Wagyu”.
Hiyama’s commitment doesn’t stop there. For sukiyaki, shabu-shabu, and other cuisines, meat is hand-cut by skilled artisans instead of using slicing machines. These artisans meticulously choose the ideal cut based on the meat quality and the specific cooking method and expertly determine the perfect fat marbling and meat thickness for cooking, tasks impossible to replicate with machines.
Finally, when guests are seated at their tables, the meat, carefully prepared to the ideal state, is cooked to perfection by attentive staff and served at just the right moment.
