Located in the Kannai area of Yokohama, this distinguished sushi restaurant carries on a legendary legacy.

This very site was once home to the famed Sukiyabashi Jiro Yokohama, the storied establishment opened by Chef Mizutani, who once stood alongside Chef Ono as one of the two top chefs at Jiro. Inheriting this heritage, Sushi Hamada opened its doors here in 2004, continuing the tradition of excellence in every handcrafted piece.

While Yokohama is a port city, it is not typically associated with the cuisine of sushi. But Chef Hamada has been loved by locals for many years and has played a significant role in the growth of Yokohama’s sushi scene.

Chef Hamada is an old friend of Chef Matsumoto from Sushi Matsumoto in Kyoto, a notable and famous figure in the surprisingly small world of Sushi. Likewise, he is also good friends with Chef Miyashita of Sushi Miyashita, another famous renowned establishment in Yokohama. Chef Miyashita trained at Sushi Matsumoto before opening his own business and frequently visited Sushi Hamada to learn even more in his early years as a chef.

Chef Hamada’s sushi-making skills are truly remarkable and he is known for his lightning-fast technique. He picks up the rice, adds the topping, and presents the perfectly created piece of sushi into your hands: all in a flash. Sushi aficionados often exclaim at his counter that they have never seen such speed and elegance from a sushi chef.

Chef Hamada’s stoic approach of thinking about sushi every day has received high praise from his colleagues and customers alike.
Quotes of his include, “Sushi is about subtraction,” “Do not do anything unnecessary,” “I just want people to enjoy good sushi,” and “A sushi chef’s job is a steady and quiet one.” This stoic mindset combined with his incredible speed embodies the essence of Edo-style sushi which was originally meant to be made and eaten quickly.

The sushi rice which Chef Hamada makes by blending Akita Komachi and Koshihikari is not sticky, with each grain still having its distinct shape. It is also prepared without sugar, using only red vinegar and salt, and this results in a crisp and granular texture which pairs perfectly with its premium toppings.

Having earned a Michelin star, reservations at Sushi Hamada are now even harder to come by. Nonetheless, it is a sushi restaurant you must visit when in Yokohama.
