Since its founding in 1974, Ginza L’écrin has stood as a pinnacle of French cuisine in Japan. Similarly Ze Kitchen Galerie in Paris’ 6th arrondissement continues to uphold its Michelin-starred excellence, while Tokyo’s Bonne Femme remains a beloved bistro, consistently recognized with the Bib Gourmand distinction. And then there is Quintessence. Tokyo’s 3-starred legend, maintaining its Michelin honor since the guide’s inception in 2008.

It is among these revered institutions that Owner and Chef Hiroki Fukaya honed his craft, refining his philosophy through years of dedication. His pursuit of the ultimate culinary expression led him to establish L’algorithme, nestled in Tokyo’s elegant Shirokane district.

Opened in 2017, the restaurant earned its first Michelin star just a year later, a testament to the depth and precision of Chef Fukaya’s expertise.

The name “L’algorithme”, meaning “algorithm” in French, embodies the chef’s meticulously calculated approach to French cuisine. Every dish follows a carefully composed equation, balancing the finest seasonal ingredients sourced from across Japan with optimal temperature control, masterful cooking techniques, and exquisite pairings. His fire-kissed meats and delicately cooked fish have particularly captivated connoisseurs of French gastronomy.

Yet, despite the mathematical precision behind each plate, L’algorithme is not a place of rigid formalities. There are no unnecessary explanations, just the pure, intuitive pleasure of exceptional cuisine. Whether you are a seasoned gourmet or new to French dining, Chef Fukaya’s creations promise a deeply satisfying experience.

With only eight exclusive seats, this hidden gem is a rare discovery in Tokyo’s vast dining scene.
To stumble upon L’algorithme is a stroke of sheer fortune, one which rewards its guests with an unforgettable journey through the art of French cuisine.
