“Taian”, which has been listed as 3 stars by the Michelin Guide since 2011,  was created chef Hitoshi Takahata. Originally training at Japanese restaurant “Ajikicho” for 15 years (which branched off from the  established Japanese restaurant “Kitcho”), he eventually went independent, thus forming the well-known restaurant “Taian”.

“By focusing entirely on the performance of serving, one’s concentration will be spent and as a result,  the act of savoring the taste of good food will lack”.

Taian’s food is by no means overly-flamboyant or flashy in presentation, rather they dedicate themselves entirely to bringing out the best flavors of each and every ingredient.

Taian adheres to the basis of  Japanese cuisine, which includes utilizing a traditional soup stock and cooking over an open charcoal fire.

Taian’s course meal has a carefully considered balance of fish and meat and is arranged to suit each season. Anyone who tries the food at Taian will cherish its good taste which will linger in their memories long after leaving.
