Led by Executive Chef Hisao Ishida, born into a family of restaurateurs, grew up surrounded by the spirit of hospitality, the restaurant presents authentic seasonal cuisine expressed through the refined style of kaiseki, where each course reflects a moment in Japan’s changing seasons.
While global sourcing is easy today, the restaurant is committed to carefully selected Japanese ingredients that reflect the seasons. In Japanese cuisine, “tableware is the dress of the dish”, and here, presentation and vessels are part of the artistry.
